The Pimlico

Found on the menu at the fabulous Hollywood restaurant The Hungry Cat.

Since I used to live in Pimlico, I had to give it a go.

And jolly delicious it was too: something of a mash-up of a julep and a daiquiri.

I think it makes for perfect summer drinking.

30ml simple syrup

2–4 sprigs mint

ice

45ml bourbon

the juice of half an orange (about 30ml)

the juice of ¾ a lime (about 22ml)

Muddle the leaves of 1 mint sprig in a cocktail shaker with the syrup. Add ice. Then pour in the bourbon, orange juice and lime juice. Shake well. Serve over ice in a tumbler, garnished with the other sprig of mint.

And, here, The Claverton (or, if you want to make it sound like a Robert Ludlum novel, The Claverton Variation!):

1 heaped teaspoon demerara sugar

a few sprigs of mint

ice

25ml bourbon

25ml gin

25ml orange juice

25ml lime juice

Muddle the leaves of 1 mint sprig in a cocktail shaker with the sugar. Add ice. Then pour in the bourbon, gin, orange juice and lime juice. Shake well. Serve over ice in a tumbler, garnished with the other sprig of mint.
